I've been drinking a lot of bubbly these days. I feel it's a wine not drank enough. We think of it for special occasions but it is really a very versatile wine that pairs nicely with many foods.
I recently opened a 2003 Vignobles Brisebarre Vouvray Brut Cuvee Millesimee. A few things about the Vouvray region of France. It's located in the Loire Valley's Touraine district. White wines that come from Vouvray are Chenin Blanc.
This sparkling wine had beautiful tight, fine bubbles and a very bready, yeasty nose with floral notes. The palate was bursting with excitement and flavors of apple and quince.
