This AEROS is 100% Cabernet Sauvignon with 13% of the grapes coming from Howell Mountain, 35% from Oakville and 52% from Yountville and there were only 195 cases made. The grapes were harvested in October 1997, they spent 18 months in oak of which 70% was new oak, medium toast. The wine was bottled in June 1999 and released in 2001. (So yes, it's been in my cellar for a while)
As the wine was poured into the decanter it showed red brickish color which is an indication of age.
In the glass aromas of smoke, charcoal and tobacco dominated. Secondary aromas lingering behind were dark berry and black berry.
Lots of oak on the palate. Blackberry and black cherry fruit showed through. The wine was silky and soft on the mouth. A great wine to be paired with our New Years Eve dinner.
If you are lucky enough to have this wine in your cellar, I would make a nice winter meal and pop the cork. Don't wait to long to open it.
