Oak Summit Cab Franc |
This past weekend Oak Summit harvested their Cab Franc. Personally I thought it was to early to harvest that variety. I guess I was incorrect. The brix number coming in at
23.6, pH 3.6, TA 7 g/l Considering the next few days of rain...well maybe they were best picked when they were?
John Bruno - Owner of Oak Summit told me "Flavors were phenomenal, and we are all glad we choose to harvest before this week of 5 days of rain. Who knows, there may be another 5 days of rain after that."
